Raspberries are a delicious fruit that are often described as being both tart and sweet. They are definitely less tart than blackberries, but tend to be a little tart, especially when they are picked a little underripe. The riper that they are, the sweeter they will taste and the more intense their flavor will be. It is believed that they originated in Turkey and spread throughout Mediterranean Europe. The Romans took raspberries throughout their empire – including to Britain. In the 16th century, people of England started cultivating raspberries.
Making tarts, pies and tartelettes is probably my favorite thing to do in the kitchen. It’s very easy to make, and it totally makes the difference when the crust is home made (vs. buying a ready to use one) and with 2-3 tricks we can have wonderful results! Take a 'Raspberry Tart' for instance, it’s frankly not complicated to make, it totally impresses and it’s quite beautiful.
