What many folks don't know is that lemon meringue pie is actually a Philadelphia invention born out of the Victorian-era, courtesy of Mrs. Elizabeth Goodfellow, a 19th century pastry shop proprietress who ran America's first cooking school. The first mention of Lemon Meringue Pie in a cookbook was in 1869 but often, during that time, these custard pies were also referred to as “lemon cream pie”. The first rice cakes were developed in Southeast Asia where rice has been grown for nearly 5,000 years. The rice cake called mochi was a sweet confection eaten by the nobility during the Nara Period from 710-794 A.D. when the Chinese greatly influenced Japanese culture.
