1 August - National IPA Day in USA
Since the 1700's, brewers have gotten quite creative in the craft of pale ale. It wasn't invented in India. While IPA stands for India Pale Ale, India was not the country that created it.
Much has been written about the genesis of pale ales, but it is generally agreed that the development of coke as a fuel for the roasting of malt, first recorded in 1642, was the starting point.
The term “pale ale” is derived from the “pale” malts used by English breweries like Bass & Co. Coke-fired maltings produced a lighter variety of malt without the smoke. The first known mention of the term “pale ale” was around 1703, and by the 1780s was in general use. By the early 1800s, pale ales were commonly referred to as “bitters.”
One of the reasons that IPA has gained favor seems obvious. More breweries (the most ever) making them, offering them to consumers and more consumers who came of age with an awareness of flavor that IPAs possess — flavor being one of the previous reasons for IPA's popularity.
