The Nutritionist's Day is celebrated in Argentina on August 11 in commemoration of the birth of Dr. Pedro Escudero, an Argentine physician born in 1887, creator of the Argentine Association of Nutrition and Diabetology (1941) and of the chair of Dietotherapeutic Cooking (1945).
In 1928 he founded the Municipal Institute of Metabolic Diseases, which later became the National Institute of Nutrition, the first organization in Latin America dedicated to the study of nutrition-related diseases. It was the first organization in Latin America dedicated to the study of nutrition-related diseases. There, he carried out assistance, teaching and research activities, without neglecting the socio-cultural analysis of nutritional problems. The Institute trained professionals from Argentina and Latin America, which is why Dr. Escudero came to be considered the "Father of nutrition in America".
The Argentine Society of Diabetology, every two years, awards the Pedro Escudero prize to stimulate research on this disease and in recognition of the contributions of this professional in the field of Nutrition.
